Polish Food Pyramid

Combination Foods:

  • Golabki (meat, grain, vegetable)
  • Fruit Dumplings (fruit, grain)
  • Bigos (meat, vegetable): a stew of layered cabbage or sauerkraut, mixed meats, game and sausage
  • Cholodnik (vegetable, meat): a cold beet and sour cream soup garnished with sliced fresh vegetables and shrimp
Dill Soup (Zupa Koprowa)

Eat it as a side dish or serve with dumplings.

7 cups Low Sodium Beef Broth
2 tablespoons Flour
1/4 cup Cold Water
2/3 cup Light Sour Cream
2 Egg Yolks
8 ounce Mixed Vegetables
3 tablespoons fresh dill leaves

Bring broth and mixed vegetables to a boil. Mix flour with one cup cold water then add to broth. Bring to a boil. Remove from heat. Add sour cream mixed with egg yolks. Add dill. Serve with dumplings or as a side dish.

Potato Pancakes (Latkes)

2 Large Baking Potatoes
1 tablespoon Grated Onion
1/4 cup Fat Free Egg Substitute
1/3 cup Flour
3 tablespoons Vegetable Oil

Peel and grate the potatoes onto paper towels. Squeeze out the moisture. Combine the potatoes and the remaining ingredients. Beat well. Heat the oil in a non-stick fry pan. Drop the batter into the oil by spoonfuls. Fry until crisp and brown on both sides. Remove from the fry pan and drain on paper towels. Serve warm. Try with plain yogurt and applesauce.
